Fiddle Diddles and Peanut Clusters

More Christmas Baking!
These two recipes are probably the easiest things I make but both are a holiday must in my family.

I grew up calling these fiddle diddles, but they're also known as haystacks and my in-laws call them macaroons. Whatever you call them, they're delish!
Chocolate Fiddle Diddles
1/2 cup butter
1/2/ cup milk
2 cups white sugar
6 tbsp cocoa powder
3 cups rolled oats
1/2 cup shredded coconut
1 tsp vanilla
pinch of salt
Bring the first 3 ingredients to a boil and remove from the heat. Add remaining ingredients and scoop onto waxed or parchment paper that has been placed on a cookie sheet. Allow to cool & harden completely.

Peanut Clusters!
These are my Aunti's fave!
2 cups chocolate chips
1 cup butterscotch chips
1 tbsp butter
2-3 cups peanuts
Melt butter and chips together over a double boiler. Add peanuts and drop into mounds on waxed or parchment paper that has been placed on a cookie sheet. Allow to cool and harden.
